World's Quickest Quiche (And So-o-o Delicious Too!)

This quick and yummy quiche was on the menu last night and needs to be shared!! One thing that makes it so quick is that it's crustless. So forget cutting in shortening, rolling out pastry, and making perfect crimps around the edges. (Or, for that matter, picking up a package of pre-made from the freezer aisle!)

Start with a cup of ham (great way to use up leftover ham).


And sprinkle it over the bottom of a greased deep pie plate or quiche dish.


Now here is the beautifully easy part. The next 9 ingredients are going to be combined in either a blender or food processor.

Four eggs:


A cup of sour cream:



A cup of cottage cheese:



A half cup of Parmesan cheese: (I used Kraft. Can't bear to put that expensive freshly grated Parmesan in a blender!)



1/4 cup of flour:



And these spices that are going to make the whole thing! Dry mustard, pepper, nutmeg, and dill weed. Mmmmmmm!



Now, sit back and let your blender process away until smooth.


Grate up a cup of your desired cheese. The original recipe (Southern Living) called for Swiss, but I like the taste of a sharp cheddar.


Now, combine your blended egg mixture with your cheese. At this point, the recipe instructs me to add 1/2 cup of chopped fresh parsley, which would be lovely, but I think the little bits of green dill will be scary enough to a couple of the Kiddos. No sense in totally freaking a child out at dinner time. So, no parsley tonight.



And pour it over your ham.


Bake at 350 for 40-45 minutes. Oh, my.



Oh, oh, oh, my! Some adjectives that come to mind are: silky, slightly tangy, soft, savory. (like the alliteration?)


And what shall we have tonight with our quiche? How about homemade hashbrowns and fresh strawberry and cantaloupe salad? Mmmmmmmm!




Beats take out pizza any night of the week!!!


Crustless Ham Quiche

1 cup diced, cooked ham
4 eggs
1 cup sour cream
1 cup small-curd cottage cheese
1/2 cup grated Parmesan cheese
1/4 cup all-purpose flour
1/2 teaspoon dried whole dillweed
1/2 teaspoon dry mustard
1/8 teaspoon ground nutmeg
1/8 teaspoon pepper
1 cup (4 ounces) shredded Swiss cheese (I used cheddar)
1/2 cup chopped fresh parsley

Sprinkle ham evenly in a greased 10-inch quiche dish. (I used a deep pie plate.) Combine eggs and next 8 ingredients in container of an electric blender. Process until smooth. Stir cheese and parsley into egg mixture. Pour over ham. Bake at 350 for 40 to 45 minutes, or until set. Let stand 10 minutes before serving.

  3. Wowza! I wish I had been a dinner guest at your house when that was served! It looks so good. And I'm like you - I LOVE sharp cheddar. Actually, my favorite is the Vermont Extra Sharp White. That will certainly be a recipe for me to try soon.

  5. The quiche looks delicious! Question: How did you make your homemade hash browns? It looks like you added a little oil, season salt, and maybe a little onion? Seeing your fruit salad makes me want to head to the grocery store for some fresh pineapple and some cantaloupe - yum! Thanks for sharing this.
